Help - I've put a number in by mistake in 5th row, 5th column - and now can't get rid of it! No amount of trying to delete it or put a different number in makes any difference.

Yes, there's a good reason for that! The digit at 5,5 is a GIVEN digit that you started the puzzle with. You can't change it because you didn't enter it.
When you solve a puzzle you can't delete or change the numbers you start with. You can only change the numbers in the empty squares, just like in a newspaper puzzle you wouldn't white out the given numbers and change them.
You can recognise given numbers because they are bold and black, whereas numbers you enter are roman and blue. And also, you can't change the given numbers. :)
